By taking baby steps toward healthy eating, even a picky eater can learn how to overcome common obstacles like how to eat vegetables or include more variety with meal planning. Personally, I found that using fat more in my meals helped make healthy food taste better. I quickly changed my tune from “I hate vegetables” to “give me more” once I learned about the benefits of butter, alfredo sauce, or cheese on top of cooked veggies. Raw veggies could be transformed too with the magic of fat. I stopped saying “I hate vegetables” after tasting celery with cream cheese sprinkled with “Everything But the Bagel” seasoning, or another favorite, dipping zucchini “chips” into fresh guacamole.
